The Sloppy Sorrento Egg Sandwich 🍳 
Servings: 1

2 slices of whole wheat toast
2 Eggs 🥚 
1/4 tsp of Garlic Powder
1/2 tsp of Italian Seasoning
Dash of salt
A handful of Spinach
1/2 a slice of Pepperjack Jalapeño Cheese
Garden Vegetable Cream Cheese
Mushroom & Onion Pasta Sauce
Pesto

Begin by heating a medium sized skillet to medium heat and greasing the pan with a non-stick spray. Fry both sides of bread and set aside.

In a bowl, crack two eggs and whisk together. Add Italian seasoning, garlic powder, and salt to egg mixture. Rip spinach into halves and halves again. Toss the spinach leaves into the egg mixture. Stir evenly and pour into skillet, covering the base. Tear Pepperjack cheese into little bits and sprinkle onto eggs. Cook for 2 min and then fold in half and flip. Cook for an additional 2-4 min.

Turn off heat and begin spreading cream cheese on one side of both toasts, follow by spreading pesto on top of cream cheese layer onto a slice and pasta sauce onto the other slice. Finish by cutting omelet in half and adding to your sandwich!
