Acai Bowl in Pineapple Boat

When we were honeymooning in New Zealand, Acai Bowls were on every corner! We became obsessed with the refreshing breakfast treat. Initially, when we attempted to recreate from memory, the consistency was not as creamy. After some experimenting and research, we realized a frozen banana is key to achieving the right thickness. The pineapple boat is simply for aesthetic because anything is more fun to eat out of a fruit, am I right?! You can top with any garnishes or none at all depending on your preference. Acai Bowl in Pineapple Boat

Servings: 1
Cook time: 10 minutes

Acai Bowl Ingredients: 
 

1 small pineapple
1 100g frozen acai pulp packet
1 frozen banana
1/4 cup Coconut Milk
2/3 cup fresh blueberries

Acai Bowl Toppings:


1 mango chopped
1 pineapple pineapple
1/4 cup blueberries
1 handful of granola

Instructions:

Slice less than half of pineapple vertically so stem still remains for the boat. Began cutting pineapple with a large knife around the perimeter of the pineapple and into cubes. Empty inside of pineapple and set aside chopped cubes.

Run frozen Acai pulp packet under hot water for 1-2 minutes and empty into a blender. Add frozen banana, coconut milk, and blueberries into the blender as well. Blend until a creamy and thick consistency, so you are able to eat with spoon.

Garnish with mango, pineapples, blueberries, and granola. Time to dig into your smoothie bowl!
