Baked Salmon With Mango Glaze and Asparagus

On a week night, preparing dinner after work can be challenging and you may be tempted to just stick a frozen meal in the microwave and call it a day! Good news for you is that our baked salmon recipe will only ask for 22-25 minutes of your time. The sweet and semi spicy glaze is a perfect summer flavor adding flair to the salmon and lemon garlic vegetables. Fresh, healthy, and so satisfying! Enjoy the recipe below!

Yield: 4-6 Servings

Ingredients

  • 2 ripe manila mangoes
  • 1 large jalapeno seeded
  • 2 tsp garlic powder
  • 2 tsp honey
  • 1 Tb. apple cider vinegar
  • 2 Tb. brown sugar
  • 2 Tb. water
  • 2 c cherry tomatoes
  • 1 bunch asparagus
  • 3 Tb. olive oil
  • 1/2 tsp pepper
  • 1/4 lemon squeezed
  • 1/4 tsp salt
  • 1/2 Tb. minced garlic
  • 1 3/4 lb. fresh salmon
  • 1 lemon sliced for garnish

Cooking Directions

  1. Preheat the oven to 425 degrees Fahrenheit. Peel, pit, and dice the mango for the glaze and set aside. Cut the jalapeño in half and seed as well to avoid making glaze too spicy.
  2. Add the garlic powder, honey, apple cider vinegar, soy sauce, mango, and jalapeño into a food processor or Ninja. Blend evenly and taste to modify the sweetness or spicy level of mango jalapeno mixture.
  3. Turn on stove and set a pan with water and brown sugar to high until fully combined and lower heat to low. Combine mango jalapeño mixture with sugar water and simmer for 15 minutes.
  4. While simmering, snap off ends of asparagus and cut cherry tomatoes in half. Toss the vegetables in a mixing bowl with olive oil, salt, pepper, minced garlic, and lemon juice. Remove mango glaze from heat and set aside.
  5. Prep a baking sheet with olive oil and coat evenly. Place salmon on the sheet and arrange vegetables around. Brush the salmon with olive oil and a generous amount of mango glaze, about half of the mixture. You can save the rest of the glaze to add on after the salmon is cooked as well! 
  6. Bake for 12 minutes (could be less depending how much salmon you have and its thickness) or until when flakes with a fork! Remove from oven and serve with a simple pasta if preferred.
