Cucumber Tea Sandwiches with Cottage Cheese and Chive
Whether it's a picnic or tea party, this triple layer cucumber tea sandwich with cottage cheese is bound to steal the show! Traditional recipes incorporate cream cheese and mayo for the stuffing, so we couldn't restrain ourselves from trying to put our own spin on it. It ended up tasting delicious and the fresh chives added another dimension of flavor. It is impossible to have just one!

Cucumber Tea Sandwiches Ingredients:
4 ounces cream cheese at room temperature
3 tablespoons cottage cheese
3 tablespoons olive oil mayo
1/4 teaspoon fried garlic
1/2 teaspoon dill weed
1/4 teaspoon black pepper
1/2 cucumber, diced
5 sprigs chives, chopped
loaf of white bread
2 tablespoons softened butter
1 sprig chives
1/2 cucumber sliced
Cucumber Tea Sandwiches Assembly Instructions:
First, we will prepare the sandwich stuffing in a small mixing bowl by combining the room temperature cream cheese, cottage cheese, mayo, fried garlic, pepper, dill weed, chopped chive, and diced cucumber. Mix until all ingredients are incorporated evenly. Set mixing bowl aside.
Chop an additional sprig of chive for the garnish. Also, slice the remaining of your cucumber for the toppings.
Remove crust from bread slices, the amount can vary depending how big you prefer your sandwiches to be! Melt butter in microwave and spread butter on all bread pieces! Spread filling on all and assemble in 3 layers as shown in picture.
Top with chive and cucumber garnish, you can use a toothpick or bamboo fork to hold your sandwiches together! Voila, now you are ready to show off your easy appetizers.
