Grapefruit Coconut Pound Cake

As I was walking down the aisles of Berkeley Bowl during a quiet morning (which rarely happens), I let my eyes wander to discover something new. My aim was to work with an ingredient I hadn't before and that is when I stumbled upon the piles of grapefruit. At that precise moment, I had no idea what I would be doing with it. So, I let time do its thing and sure enough, the craving came. And as you know, most of my cravings consist of cakes, pastries, etc., so I performed the humble duty of fulfilling my own desire and creating this delightful combination. A few reminders:

  • Leave butter out in room temperature for 30 minutes to soften
  • Do not over mix flour and always combine on a low speed setting
  • Tent the cake pan to avoid browning too quickly 

Grapefruit Coconut Pound Cake

Prep time: 15 minutes

Cook time: 1 hr 30 minutes

Yield: 6-8 servings

Ingredients

  • 2 c all-purpose flour
  • 2 c sugar
  • 2 c unsalted butter, softened
  • 8 eggs
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 1/8 tsp baking soda
  • 1/2 c juice of a freshly squeezed grapefruit
  • 1 c unsweetened coconut flakes

Cooking Directions

  1. Preheat the oven to 300 degrees Fahrenheit and grease a 9x5 inch loaf pan.
  2. In a medium mixing bowl, whisk the flour, sugar, baking soda, and salt until combined and set aside.
  3. In a separate large mixing bowl, beat the butter on a high speed setting until smooth and fluffy.
  4. Add in vanilla extract and eggs one at a time, mixing between each.
  5. Decrease the speed of your hand mixer to low and start incorporating the flour a little at a time.
  6. Lastly, mix in the grapefruit juice and coconut flakes and combine batter evenly.
  7. Pour the batter into loaf pan and bake for 1 hour and 30 minutes.
  8. Cover the pan with an aluminum foil tent to avoid quick browning of the cake.
  9. Test the readiness of the cake with a toothpick and when done, let the cake cool for 30 minutes before serving.
