Mushroom Masala

You may have noticed we have been cooking quite a bit with mushrooms lately! Well, when you have bought in excess, you tend to become creative in how you can use up all ingredients in the fridge. Just keeping it real ;) If you love Indian cuisine, this Mushroom Masala won't cause you to work up a sweat in the kitchen....it takes 25 minutes to create!

Mushroom Masala Ingredients

3 tbsp oil
1 onion
3 garlic cloves
1 tsp cumin powder
1 tsp turmeric
½ tsp ground ginger
½ tsp coriander powder
1 tsp salt
½ tsp cardamom powder
¼ tsp ground cinnamon
¼ tsp amchur
1 cup plain yogurt
1-1/2 cups water
2 cups of sliced mushrooms
1 Tbsp kasoori methi (fenugreek leaves)

Mushroom Masala Cooking Instructions:

  1. Roughly chop onion and garlic cloves and grind into a paste using either a blender or food processor. **We love using our Ninja for this!

  2. Heat oil to medium-high and sauté the paste for about 5-7 minutes until it starts to brown. Mix in the cumin, turmeric, ground ginger, coriander, salt, cardamom powder, cinnamon, and amchur.

  3. Add in the yogurt and water and mix thoroughly.

  4. Lower the heat to medium and add the sliced mushrooms. Cover and cook for 5 minutes.

  5. Mix in kasoori methi and cover and cook for another 5 minutes.
