No Bake Plum Cheesecake

If you have been following Furbaby & Foodie for a while now, you have somewhat of an idea of how much I love my cheesecakes. Whether it was Mango Basil or Oreo Goat Cheese, the options have proven to be endless. Irrefutably, the best kind is one where no oven time is involved and you are savoring the last days of stone fruit. My no bake plum cheesecake is a delectable and easy addition to your cozy family dinner party!

No Bake Plum Cheesecake

Prep time: 5 minutes

Cook time: 25 minutes

Yield: 6-8 servings

Ingredients

  • 8 Plums
  • 3 Cloves
  • 1 Cinnamon Stick
  • 1 Orange Zest & Juice
  • 1 c Water
  • 1/2 c Sugar
  • 1/2 tsp Vanilla Extract
  • 1 packet (8 oz.) Plain Cream Cheese, softened
  • 1 c Powdered Sugar
  • 1 tsp Vanilla Extract
  • 14.4 oz Graham Crackers, crushed
  • 1/2 c Butter, melted

Cooking Directions

  1. Rinse plums, slice in half, and pit. Continue slice into 1/2 inch thick pieces. Remove zest from orange and set aside.
  2. In a medium sized saucepan, add the water and sugar and bring to a boil until dissolving all sugar. Stir gently. Lower heat to medium and add plums, orange zest and juice, cloves, vanilla extract, and cinnamon stick.
  3. Simmer for 15 minutes, then with a slotted spoon, remove plums and set aside in a bowl. Continue to reduce the plum sauce for 10 more minutes and turn off heat.
  4. Begin the cheesecake layer by beating the cream cheese, powdered sugar, and vanilla extract on a low setting until smooth.
  5. Crush the graham crackers in a Ninja or preferred food processor until fine. Combine the crackers and melted butter in a bowl to form crust.
  6. In small mason jars, arrange the plum cheesecake dessert by first adding crust, then cheesecake, and topping with plums as well as plum sauce.
  7. Cool jars in the fridge for 2-4 hours to set and then serve!
